Help & Advice required

Hello
We are a small museum/charity & have just acquired a Plustek OpticSlim 1180 A3 scanner which suited our finances. we were previously using Epsom Perfection 3490 Photo A4, now a bit old but has given excellent results.
We do now have some larger documents to scan for our archive and required the increase to A3.
We have a bit of a problem when scanning some old brochures etc from late 1800's early 1900's where the background to the text/drawings has a distinct pink tinge rather than a true reflection of the actual colour which is usually an off white/buff shade due to the age of the paper.
Have enquired with Plustek but they imply that its a reasonably priced scanner & that how it is!!!!
They have suggested we should perhaps look at Twain software? We are certainly not technical & really need some direction in what the best solution is, can anyone help.
